SAN - Storage Area Network
A SAN provides centralized storage to servers or workstations over a Fiber Channel network. Instead of attaching your Fiber Channel Storage Device to the client directly it is attached to a switch which allows it to connect to several different clients. It also allows you to attach several different FC Devices to the network as well. Generally unless you give each system it's own partitions on the FC Storage Device, you need to run a special File System that allows for file locking on the SAN device. (File Locking prevents over writing a file that is already being editted by someone else). GFS - Global File System - is a linux file system designed just for this purpose.
